- To assist Sous Chef in maintaining and improving food quality standards, creativity,ES and merchandising in order to increase customer satisfaction and sales in all kitchens and F&B outlets
- To contribute to the production of the highest possible food quality, and to coordinate staff in the delegated section
- o work with Commis Chefs to ensure that seasoning, portions, quality and appearance of food and taste is up to the standards laid out by the Hotel
- To set up for lunch, dinner, or any other catering or banqueting event by making sure that proper amounts are in place for forecasted covers, special functions and all reservations
- To supervise the proper set-up of each item on menus and ensures their completion
- To maintain an exact record of preparation, cooking and presentation specifications of all dishes produced in the section in a file which is kept at the section at all times for reference
- To ensure that all Health and Safety Procedures (inc HACCP) are understood and followed by all kitchen team members as required by the Law
- To perform other duties as and when requested by the Executive Chef or Sous Chef.
- To pay attention to the tidiness and appearance of the team restaurant
- To attend daily meetings to discuss service goals and objectives for the day
- To attend weekly team briefing with all F&B key personnel to discuss and effectively cover all forthcoming events and coverage of past week
- To ensure that core standards such as hygiene and service procedure are adhered to
- To ensure close client liaison is maintained at all times throughout the entire F&B operation and all banqueting events
- To assist in generating new ideas for service and products that will maintain a competitive and leading edge over our Competitive Set
- To attend daily kitchen briefings, weekly events meetings and monthly Department Communications Meeting
- To effectively manage distribution of workload amongst self and direct reports
- To assist in providing creative methods for improving Customer Service
- To follow cleaning schedules (daily, weekly, monthly)
- To ensure that Fire Prevention, all Health and Safety Procedures (inc HACCP) are understood and followed by all kitchen team members as required by the Law
- To report to the Hotels Doctor any incidents of sore throat, skin problems, boils, diarrhoea, running eyes or ears, vomiting, jaundice and in general, any illness or injury affecting food safety
